1 cup mixed berries (strawberries, raspberries, blueberries)

2 tablespoons sugar (adjust based on berry sweetness)

1 cup sparkling water or club soda

1/2 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves for garnish (optional)

Instructions
 

In a small saucepan over medium heat, combine the mixed berries and sugar. Cook for about 5-7 minutes, stirring occasionally until the berries break down, and a syrup forms. Remove from heat and let it cool slightly.

    In a separate bowl, whisk the heavy cream and vanilla extract together until soft peaks form. This creates a light whipped cream texture.

      Fill serving glasses halfway with ice cubes.

        Pour the cooled berry syrup over the ice until the glass is about 2/3 full.

          Top the berry syrup with sparkling water or club soda, gently stirring to combine.
