1 pound Ahi tuna, sashimi-grade, diced into ½-inch cubes

2 cups sushi rice

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon green onions, finely chopped

1 tablespoon seaweed salad (wakame)

1 avocado, sliced

½ cucumber, thinly sliced

¼ cup radish, sliced thinly

1 tablespoon black sesame seeds

1 tablespoon pickled ginger (optional)

Salt and pepper to taste

Nori sheets, cut into strips (for garnish)

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a rice cooker or a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Cook according to rice cooker instructions or bring to a boil, cover, and reduce heat to low for about 20 minutes. Once cooked, let it sit covered for another 10 minutes. Fluff with a fork.

    Prepare the Ahi Tuna: In a medium bowl, combine the diced Ahi tuna with soy sauce, sesame oil, green onions, and a pinch of salt and pepper. Toss gently until the tuna is well-coated. Refrigerate for about 15 minutes to let the flavors meld.
