1 lb ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 green bell pepper, diced

1 red bell pepper, diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup beef or vegetable broth

Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions
 

Set your Instant Pot to the Sauté function. Add the ground beef (or turkey) and cook until browned, breaking it up with a spatula. Once browned, drain any excess fat.

    Add the diced onion and minced garlic to the pot. Sauté for about 2-3 minutes until softened and fragrant.

      Stir in the diced green and red bell peppers, and cook for an additional 2 minutes.

        Add the kidney beans, black beans, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix everything well.

          Pour in the beef or vegetable broth and stir to combine. Ensure all ingredients are mixed evenly.

            Secure the lid of the Instant Pot, ensuring the vent is in the sealing position. Set it to Manual or Pressure Cook on high for 15 minutes.

              Once the cooking time is complete, allow for a natural release for 10 minutes before switching the vent to Venting to release any remaining steam.

                Carefully open the lid and stir the chili. Adjust seasoning if needed.
