2 lbs oxtail, cut into pieces

8 cups beef broth

1 large onion, quartered

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, chopped

2 large potatoes, diced

1 cup corn kernels (fresh or frozen)

2 bay leaves

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt (to taste)

½ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Oxtail: Rinse the oxtail pieces under cold water and pat dry with paper towels. Season with salt and black pepper.

    Sear the Oxtail: In a large, heavy-bottomed pot, heat the olive oil over medium-high heat. Add the oxtail pieces in batches, searing them until browned on all sides (about 4-5 minutes per side). Remove and set aside.

      Sauté the Aromatics: In the same pot, add the onion and garlic. Cook for about 3-4 minutes until fragrant and the onion is translucent.

        Add the Liquid: Pour in the beef broth, scraping any browned bits from the bottom of the pot. Add Worcestershire sauce, soy sauce, bay leaves, smoked paprika, and red pepper flakes (if using). Stir to combine.

          Incorporate Vegetables: Return the seared oxtail to the pot. Add the carrots, celery, potatoes, and corn. Stir gently to ensure everything is submerged in the broth.

            Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2.5 to 3 hours, or until the oxtail is tender and falling off the bone. Stir occasionally and check the seasoning, adjusting with more salt and pepper as needed.
