Ingredients
  

2 cups cooked, shredded chicken

1 cup shredded cheese (cheddar or a blend)

1/2 cup black beans, rinsed and drained

1/2 cup corn (fresh or frozen)

1/4 cup chopped red onion

1/4 cup chopped fresh cilantro

1 tsp taco seasoning

4 large flour tortillas

1 tbsp olive oil

Salsa and sour cream for serving

Instructions
 

In a mixing bowl, combine the shredded chicken, black beans, corn, red onion, cilantro, and taco seasoning. Mix well to combine all ingredients evenly.

    Heat a large skillet over medium heat and add olive oil.

      Place one tortilla in the skillet. Sprinkle a generous amount of cheese onto half of the tortilla.

        Spoon a portion of the chicken mixture on top of the cheese, followed by a little more cheese for extra melty goodness.

          Fold the tortilla in half over the filling, pressing gently.

            Cook for about 3-4 minutes on one side, until golden brown. Carefully flip and cook for another 3-4 minutes, until the other side is golden and cheese is melted.

              Remove from the skillet and let it cool for a minute before slicing into wedges.

                Repeat with the remaining tortillas and filling.

                  Serve warm with salsa and sour cream on the side.
