Ingredients

4 large buttery croissants

4 large eggs

1/2 cup cheddar cheese, shredded

1/4 cup cream cheese, softened

4 strips of crispy bacon or 1 avocado sliced

1 cup fresh spinach or arugula

1/4 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon butter for cooking eggs

Fresh herbs (chives or parsley), chopped for garnish

Instructions

Prep the Croissants: Preheat your oven to 350°F (175°C). Slice the croissants in half horizontally and place them on a baking sheet, cut side up. Bake in the oven for about 5 minutes until slightly toasted.

Cook the Eggs: In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the pan and season with garlic powder, salt, and pepper. Cook to your desired level of doneness (scrambled, sunny-side-up, or over-easy). If scrambling, gently stir until just set.

Assemble the Sandwiches: Spread a layer of cream cheese on the bottom half of each croissant. Top with a handful of fresh spinach or arugula. Add a layer of bacon or avocado, followed by the cooked eggs. Sprinkle cheddar cheese on top.

Melt the Cheese: Place the assembled sandwiches back in the oven for another 3-5 minutes, or until the cheese is melted and bubbly.

Add Final Touches: Remove from the oven and sprinkle with fresh herbs. Close the croissant tops and serve immediately while warm.
