Ingredients
  

1 ½ cups Biscoff cookies, crushed

¼ cup unsalted butter, melted

16 oz cream cheese, softened

½ cup granulated sugar

½ cup Biscoff cookie butter

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

A pinch of salt

Extra Biscoff cookies, for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a mixing bowl, combine the crushed Biscoff cookies and melted butter. Mix until the cookies are evenly coated. Press this mixture firmly into the bottom of the prepared baking pan to form an even crust.

      Prepare the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well combined.

        Add Cookie Butter and Eggs: Mix in the Biscoff cookie butter until fully incorporated. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and salt until the mixture is creamy and smooth.

          Bake the Cheesecake Bars: Pour the cheesecake mixture over the prepared crust and smooth the top. Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center has a slight jiggle.

            Cool and Chill: Once baked, remove from the oven and let the bars cool completely in the pan. Then, refrigerate for at least 4 hours, or overnight for best results.

              Serve: Once chilled, lift the cheesecake out of the pan using the parchment overhang. Slice into bars and top with additional crushed Biscoff cookies if desired. Enjoy!
