2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

6 tablespoons cold butter, cubed

¾ cup buttermilk

1 pound breakfast sausage, crumbled

2 tablespoons all-purpose flour (for the gravy)

2 cups whole milk

½ teaspoon pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon Worcestershire sauce (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Preheat the Oven: Set your oven to 425°F (220°C).

    Make the Biscuit Dough: In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt. Add the cold cubed butter to the bowl, and using a pastry cutter or your fingers, work it into the flour until the mixture resembles coarse crumbs.

      Add Buttermilk: Pour in the buttermilk gradually, stirring gently until combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Prepare the Gravy: In a skillet over medium heat, cook the crumbled breakfast sausage until browned and cooked through. Remove the sausage and set aside but leave the drippings in the skillet.

          Make a Roux: Sprinkle 2 tablespoons of flour into the skillet with the drippings and stir for about 1 minute to form a roux. Gradually whisk in the milk, stirring continuously until the mixture is smooth and thickened.

            Season the Gravy: Add the cooked sausage back into the skillet and stir in pepper, garlic powder, onion powder, and Worcestershire sauce. Simmer for about 5-7 minutes until completely thick.

              Form the Bombs: On a floured surface, roll out the biscuit dough to about ½ inch thick. Cut into squares of approximately 4x4 inches. Place a spoonful of the sausage gravy mixture in the center of each square. Gather the corners of the dough to securely envelop the filling, pinching them together to form a sealed ball.

                Bake the Bombs: Place the gravy bombs seam-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
