1/4 cup unsalted butter, cold and cubed

1 cup buttermilk (or milk with 1 tablespoon lemon juice)

1/4 cup honey

1/2 cup shredded cheddar cheese (optional)

1/4 cup fresh chives, chopped (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.

        In a separate bowl, mix together the buttermilk and honey until combined.

          Pour the buttermilk mixture into the flour mixture and stir gently until just combined. If you’re using cheddar cheese and chives, fold them in at this stage for added flavor.

            Turn the dough out onto a floured surface and gently knead it 4-5 times until it comes together (be careful not to over-knead).

              Pat the dough into a rectangle about 1 inch thick. Using a biscuit cutter or a drinking glass, cut out rounds from the dough and place them onto the prepared baking sheet.

                Gather the scraps, reroll them, and cut out additional biscuits.

                  Bake for 12-15 minutes, or until the tops are golden brown.

                    Once baked, remove from the oven and allow to cool slightly before serving.
