Ingredients

2 cups cooked chicken, shredded

4 cups chicken broth

1 cup Bisquick™ mix

2/3 cup milk

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon dried thyme

1/4 teaspoon black pepper

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons butter

Fresh parsley for garnish (optional)

Instructions

In a large pot or Dutch oven, melt the butter over medium heat. Add the chicken broth and bring to a gentle simmer.

Stir in the frozen mixed vegetables and cook for about 5 minutes until heated through.

In a separate bowl, mix the Bisquick™ mix, milk, garlic powder, onion powder, thyme, and black pepper until just combined. Be careful not to overmix.

Drop tablespoonfuls of the dumpling batter into the simmering broth. Make sure they are spaced out as they will expand during cooking.

Cover the pot and let the dumplings cook for about 10-12 minutes without lifting the lid, until they have risen and are cooked through.

Gently stir in the shredded chicken and let it heat through for an additional 2-3 minutes.

Taste and adjust seasonings if necessary.

Serve hot in bowls, garnished with fresh parsley if desired.
