Ingredients

1 can (15 oz) black beans, rinsed and drained

1 cup frozen corn, thawed

1 red bell pepper, finely diced

1/2 red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper to taste

Instructions

In a large mixing bowl, combine the rinsed black beans and thawed corn.

Add the finely diced red bell pepper, chopped red onion, and minced jalapeño to the bowl.

Stir in the chopped cilantro for a fresh flavor boost.

Squeeze in the juice of two limes and sprinkle the ground cumin over the mixture.

Season with salt and pepper to taste, mixing everything together gently to avoid mashing the beans.

Allow the salsa to sit for at least 15 minutes at room temperature for the flavors to meld.

Serve with tortilla chips or as a topping for tacos, grilled chicken, or fish.
