500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

4 tablespoons soy sauce

2 tablespoons oyster sauce

2 tablespoons corn starch

1 tablespoon sugar

1 tablespoon vegetable oil

3 cloves garlic, minced

1-inch ginger, minced

1 bell pepper (red or green), sliced

1 cup broccoli florets

1 onion, sliced

2 spring onions, chopped for garnish

Cooked rice or noodles, to serve

Instructions
 

In a mixing bowl, combine the chicken pieces with 1 tablespoon of black pepper, soy sauce, oyster sauce, corn starch, and sugar. Marinate for at least 30 minutes for better flavor.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, sautéing until fragrant.

      Add the marinated chicken to the skillet in a single layer. Cook until golden and cooked through, about 4-5 minutes.

        Toss in the sliced bell pepper, broccoli florets, and onion. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

          Adjust seasoning with the remaining black pepper to taste. If you prefer a spicier kick, feel free to add more black pepper.

            Serve over cooked rice or noodles, garnished with spring onions.
