2 slices of sourdough bread

1 tablespoon unsalted butter, softened

1/4 cup brie cheese, sliced (rind removed)

2 tablespoons blackberry jam

1 tablespoon balsamic reduction

1/4 cup rhubarb, finely chopped

1 teaspoon dried lavender

Fresh arugula or spinach for topping

Salt and pepper to taste

Prepare the Rhubarb & Lavender Mix: In a small bowl, combine the finely chopped rhubarb, dried lavender, a pinch of salt, and a touch of pepper. Set aside to let the flavors meld.

    Assemble the Sandwich: Spread butter on one side of each slice of sourdough bread. On the non-buttered side of one slice, layer the brie cheese evenly. Top the brie with blackberry jam and drizzle balsamic reduction over the jam.

      Add Filling: Sprinkle the rhubarb and lavender mixture on top of the blackberry jam. If desired, add a handful of fresh arugula or spinach for a peppery bite.

        Top and Cook: Place the second slice of sourdough on top, buttered side facing out. Heat a non-stick skillet over medium heat. Once hot, place the sandwich in the skillet.

          Grill the Sandwich: Cook for about 3-4 minutes until the bottom side is golden brown. Carefully flip the sandwich using a spatula and grill the other side for another 3-4 minutes, pressing gently to ensure even melting of the cheese.

            Check for Doneness: The sandwich is ready when the brie is melted, and both sides are beautifully browned. Remove from the skillet and let it rest for a minute.

              Slice and Serve: Cut the sandwich in half diagonally for a beautiful presentation. Optionally, drizzle a little more balsamic reduction on top and sprinkle with edible flowers if desired.
