Blackberry & Goat Cheese Grilled Cheese Recipe

4 slices of artisanal sourdough bread

4 ounces goat cheese, softened

1 cup fresh blackberries

2 tablespoons honey

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

2 tablespoons butter, softened (for grilling)

Instructions
 

In a small bowl, mix together the honey and balsamic vinegar. Set aside.

    In another bowl, lightly mash half of the blackberries with a fork, leaving some whole for texture. Stir in the honey-balsamic mixture and season with a pinch of salt and pepper.

      Spread a generous layer of softened goat cheese on one side of each slice of sourdough bread.

        On two of the slices (goat cheese side up), spoon the blackberry mixture evenly over the goat cheese.

          Top with the remaining two slices of bread, goat cheese side down, to form two sandwiches.

            Heat a skillet over medium heat and add the olive oil. Once hot, place the sandwiches in the skillet.

              Cook for 3-4 minutes on one side until golden brown, then carefully flip the sandwiches.

                Spread the softened butter on the top side of the sandwiches before flipping to help them crisp up. Cook for an additional 3-4 minutes until the other side is golden brown and the cheese is melty.

                  Remove from the pan, slice in half, and garnish with the remaining blackberries.

                    Serve warm and enjoy the sweet and savory flavors!
