1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

3/4 cup granulated sugar

1/2 tsp vanilla extract

3 large eggs

1/2 cup sour cream

2 tbsp dried culinary lavender

1/2 cup fresh blackberries (plus extra for garnish)

1 tbsp lemon juice

For the blackberry lavender sauce:

1 cup fresh blackberries

1/4 cup sugar

1/2 cup water

1 tsp dried culinary lavender

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then let cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese and sugar until smooth using an electric mixer.

              - Add in the vanilla extract and mix again.

                - Add the eggs one at a time, mixing on low until just combined after each addition.

                  - Mix in the sour cream, dried lavender, blackberries, and lemon juice until incorporated. Be careful not to overmix.

                    Bake the cheesecake:

                      - Pour the cheesecake filling over the cooled crust and smooth the top.

                        - Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

                          - Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                            Prepare the blackberry lavender sauce:

                              - In a small saucepan, combine fresh blackberries, sugar, water, and dried lavender.

                                - Bring to a gentle boil, then reduce heat and simmer for 10-15 minutes until the sauce thickens slightly.

                                  - Strain the sauce through a fine mesh sieve to remove the seeds and lavender, then let it cool.

                                    Chill and serve:

                                      - Once the cheesecake has cooled completely, refrigerate for at least 4 hours or overnight.

                                        - To serve, slice the cheesecake, drizzle with blackberry lavender sauce, and garnish with extra fresh blackberries on top.
