Ingredients

4 tablespoons all-purpose flour

2 tablespoons granulated sugar

1/8 teaspoon baking powder

1/8 teaspoon salt

3 tablespoons milk (dairy or non-dairy)

2 tablespoons vegetable oil (or melted butter)

1/4 teaspoon vanilla extract

1/3 cup fresh blackberries (plus extra for garnish)

1 tablespoon powdered sugar (for dusting)

Instructions

In a microwave-safe mug, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until a smooth batter forms, ensuring there are no lumps.

Gently fold in the fresh blackberries, reserving a few for garnish.

Microwave the mug on high for 1 minute and 15 seconds. Check for doneness – the cake should be set but soft in the middle. If necessary, microwave in 10-second intervals until fully cooked.

Carefully remove the mug from the microwave (it will be hot!) and let it cool for a minute.

Dust with powdered sugar and top with the reserved blackberries for a decorative finish.
