4 salmon fillets, skin removed

2 cups fresh spinach, chopped

½ cup cream cheese, softened

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the minced garlic and sauté until fragrant (about 1 minute).

      Add the chopped spinach to the skillet and sauté until wilted (about 2-3 minutes).

        In a mixing bowl, combine the sautéed spinach, cream cheese, Parmesan cheese, salt, pepper, and onion powder. Mix until well blended.

          Using a sharp knife, carefully cut a pocket in each salmon fillet. Be cautious not to cut through the entire fillet.

            Stuff each salmon fillet with the creamy spinach mixture, pressing down gently to ensure it holds together.

              In a small bowl, combine paprika, cayenne pepper, dried thyme, salt, and black pepper. Rub this spice mix generously on both sides of the stuffed salmon fillets.

                In an oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets, searing each side for about 3-4 minutes or until they form a blackened crust.
