4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spinach Filling: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

      Mix the Filling: In a mixing bowl, combine the sautéed spinach, grated Parmesan cheese, cream cheese, garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined.

        Prepare the Salmon: Make a pocket in each salmon fillet by slicing through the thickest part without cutting all the way through. Season both sides of the salmon fillets with Cajun seasoning, salt, and pepper.

          Stuff the Salmon: Generously fill each salmon pocket with the spinach and cheese mixture. Secure the opening with toothpicks if needed.

            Blacken the Salmon: In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, carefully place the stuffed salmon fillets in the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through and a nice crust is formed.

              Bake (Optional): For extra creaminess, transfer the salmon to a baking dish and bake in the oven for an additional 5-7 minutes.
