4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to heat preference)

Salt and black pepper to taste

2 tablespoons olive oil

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

      Add the chopped spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat and let cool slightly.

        In a mixing bowl, combine the sautéed spinach, ricotta cheese, grated Parmesan, onion powder, salt, and black pepper. Mix well until fully combined.

          Carefully create a pocket in each salmon fillet by slicing it horizontally, but not all the way through.

            Stuff each salmon fillet with the spinach and cheese mixture, pressing gently to ensure the filling is packed.

              In a small bowl, mix the smoked paprika and cayenne pepper with the remaining 1 tablespoon of olive oil. Brush this mixture all over the stuffed salmon fillets.

                Heat a non-stick skillet over medium-high heat. Place the stuffed salmon fillets skin-side down in the skillet and sear for 3-4 minutes until the skin is crispy.

                  Transfer the salmon fillets to a baking dish and finish cooking in the preheated oven for an additional 8-10 minutes, or until the salmon is cooked to your desired doneness.

                    Remove from the oven and let it rest for a couple of minutes before serving.
