4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon dried thyme

Salt and pepper to taste

Juice of 1 lime

For the Avocado Corn Salsa:

1 avocado, diced

1 cup fresh corn kernels (or frozen, thawed)

1 small red onion, finely chopped

1 medium tomato, diced

1 jalapeño, deseeded and minced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Prepare the Blackened Seasoning: In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, dried thyme, salt, and pepper.

    Coat the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides lightly with olive oil, then generously coat each fillet with the blackening seasoning mixture, pressing it into the salmon.

      Heat the Pan: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

        Cook the Salmon: Place the seasoned salmon fillets in the hot skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a crusty, blackened exterior. Ideally, the internal temperature should reach 145°F (63°C). Squeeze lime juice over the salmon as it cooks.

          Prepare the Salsa: While the salmon is cooking, combine the diced avocado, corn, red onion, tomato, jalapeño, cilantro, lime juice, and a pinch of salt in a mixing bowl. Gently toss to combine, being careful not to mash the avocado.

            Serve: Once the salmon is cooked, remove it from the skillet and let it rest for a minute. Serve the blackened salmon topped with a generous scoop of avocado corn salsa.
