8 oz rotini pasta

4 slices of thick-cut bacon, cooked and crumbled

1 cup cherry tomatoes, halved

1 cup crisp romaine lettuce, chopped

1/4 cup red onion, finely diced

1/2 cup mayonnaise

1 tbsp apple cider vinegar

1 tsp Dijon mustard

1/2 tsp garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package directions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to cool.
