Ingredients
  

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

¼ tsp salt

1/3 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

½ cup milk

1 cup fresh blueberries (or frozen, thawed)

4 oz cream cheese, softened

2 tbsp powdered sugar

1 tsp lemon zest (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    In a medium bowl, mix the flour, sugar, baking powder, and salt until well combined.

      In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the blueberries, preserving some for topping if desired. Set the mixture aside.

            In a small bowl, mix the softened cream cheese, powdered sugar, and lemon zest (if using) until smooth and creamy.

              To assemble the muffins, fill each muffin cup with a spoonful of the batter until it’s about one-third full. Add a teaspoon of the cream cheese mixture on top and then cover with more muffin batter until the cups are about 2/3 full.

                Top each muffin with a few reserved blueberries for a beautiful presentation.

                  Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

                    Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
