1 lb shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

½ cup cornstarch

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper, to taste

Vegetable oil, for frying

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 green onions, chopped

1 tablespoon fresh cilantro, chopped (optional)

Instructions
 

Marinate the Shrimp: In a bowl, combine shrimp and buttermilk. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.

    Prepare the Breading: In a separate bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

      Coat the Shrimp: Remove shrimp from the buttermilk, shaking off excess liquid. Dredge each shrimp in the flour mixture, ensuring they are well-coated. Shake off any excess flour.

        Heat the Oil: In a deep frying pan or a Dutch oven, heat enough vegetable oil to submerge the shrimp over medium-high heat until it reaches 350°F (175°C).

          Fry the Shrimp: Working in batches, carefully add the coated shrimp to the hot oil. Fry until golden brown and cooked through, about 2-3 minutes per side. Use a slotted spoon to transfer the shrimp to a plate lined with paper towels.

            Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha. Adjust the sriracha to your preferred spice level.
