4 boneless, skinless chicken thighs

1/2 cup bourbon whiskey

1/4 cup soy sauce

1/4 cup brown sugar

1 tablespoon apple cider vinegar

1 tablespoon minced garlic

1 tablespoon minced fresh ginger

1 teaspoon ground black pepper

2 green onions, sliced (for garnish)

2 tablespoons cornstarch (optional, for thickening sauce)

2 tablespoons vegetable oil

Marinate the Chicken: In a mixing bowl, combine the bourbon, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and black pepper. Whisk until the sugar is dissolved. Place the chicken thighs in a large resealable bag or shallow dish, pour the marinade over the chicken, and seal or cover. Allow it to marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and add it to the skillet. Sear the chicken for about 5-7 minutes on each side, or until browned and cooked through (internal temperature should reach 165°F).

      Prepare the Sauce: In the same skillet, add the reserved marinade. If you want a thicker sauce, mix the cornstarch with a little cold water to create a slurry and stir it into the marinade. Bring the sauce to a simmer, allowing it to reduce and thicken slightly for about 5-10 minutes.

        Glaze the Chicken: Return the chicken to the skillet, coating it thoroughly with the bourbon sauce. Cook for an additional 2-3 minutes, allowing the chicken to absorb the flavors.
