While gnocchi may be an Italian classic today, its origins can be traced back to ancient times, with variations found in many cultures. The word "gnocchi" is believed to have derived from the Italian word "nocca," meaning knuckle, which refers to the shape of the dumplings. Traditionally, gnocchi is made with potatoes, flour, and sometimes eggs, creating a delicate dumpling that can be served in various sauces or toppings.

Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

4 slices of bacon, chopped

2 cups fresh broccoli florets

8 ounces Boursin cheese (herb and garlic flavor)

½ cup chicken or vegetable broth (or pasta water)

1 teaspoon garlic powder

Salt and pepper to taste

¼ cup grated Parmesan cheese (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions – usually around 2-3 minutes or until they float to the top. Drain and set aside.

Cook the Bacon: In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon using a slotted spoon and set aside, leaving the bacon drippings in the skillet.

Sauté Broccoli: In the same skillet, add the broccoli florets to the bacon drippings and cook for about 4-5 minutes until they become tender but still bright green. Stir in garlic powder, and season with salt and pepper.

Combine Ingredients: Add the cooked gnocchi to the skillet with the sautéed broccoli. Pour in the chicken or vegetable broth and add the Boursin cheese. Stir well to combine, allowing the cheese to melt and create a creamy sauce. If it’s too thick, add a bit more broth or pasta water to reach your desired consistency.

Finish and Serve: Gently fold in the crispy bacon, allowing it to warm through. Taste and adjust seasoning if necessary. Serve the gnocchi warm, garnished with grated Parmesan cheese and fresh chopped parsley.
