2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

3 cups fresh spinach

4 large eggs

1/4 cup feta cheese, crumbled

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large cast-iron skillet over medium heat.

    Add the chopped onion to the skillet and sauté for about 3-4 minutes, until it becomes translucent and soft.

      Stir in the minced garlic and cook for an additional minute, until fragrant.

        Add the fresh spinach to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes, stirring frequently, until the spinach wilts down.

          Create four small wells in the spinach mixture and crack one egg into each well.

            Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set and the yolks are at your desired doneness (runny or fully cooked).

              Sprinkle crumbled feta cheese over the dish just before serving, allowing it to slightly melt from the heat.

                Garnish with fresh parsley for an added burst of flavor and color.
