6 large croissants, torn into bite-sized pieces

6 large eggs

2 cups milk

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1 cup cooked breakfast sausage, crumbled

1/2 cup bell peppers, finely diced (mixed colors for vibrancy)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with non-stick spray.

    In a large bowl, whisk together the eggs and milk until well combined. Add garlic powder, salt, black pepper, and thyme, mixing until evenly distributed.

      In the greased baking dish, scatter the torn croissant pieces evenly across the bottom.

        Top the croissant pieces with the cooked breakfast sausage, diced bell peppers, cheddar cheese, and feta cheese.

          Pour the egg mixture over the entire dish, ensuring everything is well soaked. Use a fork to gently press down on the croissant pieces, encouraging them to absorb the egg mixture evenly.

            Sprinkle the chopped green onions on top.

              Cover the baking dish with aluminum foil and let it sit in the refrigerator for at least 30 minutes (or up to overnight for flavors to meld).
