2 cups broccoli florets

2 medium potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup sharp cheddar cheese, shredded

1 cup milk (or heavy cream for extra richness)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried thyme (optional)

Fresh parsley for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
