1 baguette or ciabatta loaf

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup fresh basil, chopped

3 tablespoons extra virgin olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese or fresh mozzarella balls

Instructions
 

Preheat your oven to 400°F (200°C).

    Slice the baguette or ciabatta into 1/2 inch thick pieces.

      Arrange the bread slices on a baking sheet and brush each side lightly with olive oil.

        Toast the bread in the preheated oven for about 5-7 minutes until golden brown and crispy.

          While the bread is toasting, prepare the topping. In a medium bowl, mix the halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and pepper to taste.

            Remove the toasted bread from the oven and let it cool slightly.

              Spoon the tomato mixture generously onto each slice of toasted bread. If desired, sprinkle crumbled feta cheese or add a mozzarella ball on top for extra creaminess.

                Drizzle a little more olive oil over the assembled bruschetta for a finishing touch.

                  Serve immediately while the bread is still warm and crispy.
