2 cups Brussels sprouts, halved

1 medium potato, diced

1 red bell pepper, diced

1 small onion, finely chopped

2 tablespoons olive oil

4 large eggs

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat one tablespoon of olive oil in a large skillet over medium heat.

    Add the diced potato to the skillet and season with salt, pepper, and half the smoked paprika. Cook for about 8-10 minutes, stirring occasionally, until golden and tender.

      Reduce the heat to medium-low and add another tablespoon of olive oil. Add the chopped onion and bell pepper to the skillet and sauté for about 5 minutes until they begin to soften.

        Increase the heat to medium and add the halved Brussels sprouts to the skillet. Sprinkle the remaining smoked paprika over the top, and stir everything together. Cook for an additional 8-10 minutes, or until the Brussels sprouts are tender and slightly crispy.

          Using a spoon, make four small wells in the hash, and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are set to your desired doneness.

            Remove from heat and garnish with fresh parsley before serving.
