Ingredients

12 large portobello or cremini mushrooms, stems removed

1 cup shredded cooked chicken (rotisserie chicken works great)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup blue cheese crumbles (optional)

1/4 cup buffalo wing sauce (adjust to spice preference)

1/4 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Mushroom Caps: Gently clean the mushrooms with a damp cloth. Carefully remove the stems, making sure to keep the caps intact, and place the caps on the prepared baking sheet, open side up.

Make the Buffalo Chicken Filling: In a medium bowl, combine the shredded chicken, cream cheese, cheddar cheese, blue cheese (if using), buffalo sauce, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are incorporated.

Stuff the Mushrooms: Spoon the buffalo chicken mixture generously into each mushroom cap, pressing down slightly to pack the filling.

Bake the Mushrooms: Bake the stuffed mushrooms in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the filling is bubbly and slightly golden.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Sprinkle with chopped chives or parsley for a fresh finish. Serve warm with additional buffalo sauce on the side for drizzling if desired.
