4 large sweet bell peppers (assorted colors)

2 cups cooked shredded chicken

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 cup buffalo wing sauce (adjust to taste)

1 cup shredded cheddar cheese, divided

1/4 cup blue cheese crumbles (optional)

1/4 cup green onions, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peppers: Slice the tops off the sweet bell peppers and remove the seeds and membranes. Place them in a baking dish, cut-side up.

      Make the Filling: In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, buffalo wing sauce, and half of the shredded cheddar cheese. Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste.

        Stuff the Peppers: Generously spoon the buffalo chicken mixture into each of the prepared sweet bell peppers, packing them lightly.

          Top with Cheese: Sprinkle the remaining shredded cheddar cheese on top of the stuffed peppers. If you like, also add blue cheese crumbles for extra flavor.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once out of the oven, allow the peppers to cool for a few minutes. Garnish with chopped green onions before serving.
