8 oz elbow macaroni

2 cups cooked chicken, shredded (rotisserie chicken works great)

1/2 cup buffalo wing sauce (adjust to taste)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 tablespoons butter

2 tablespoons all-purpose flour

3 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup blue cheese crumbles (optional for topping)

1/4 cup green onions, chopped (for garnish)

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Prepare the cheese sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute to create a roux. Gradually whisk in the milk and continue cooking until the mixture thickens, about 5-7 minutes.

      Add spices: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper.

        Combine cheese: Remove the saucepan from heat and stir in both shredded cheeses and the cream cheese until melted and smooth.

          Combine chicken and buffalo sauce: In a separate bowl, mix the shredded chicken with the buffalo wing sauce. Adjust the amount based on your desired spice level.

            Mix everything together: In a large mixing bowl, combine the cooked macaroni, buffalo chicken mixture, and the cheese sauce. Stir until the pasta is evenly coated.

              Bake (optional): Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. If desired, top with blue cheese crumbles. Bake for about 20-25 minutes until the top is bubbly and slightly golden.
