Ingredients

1 pound large shrimp, peeled and deveined

1/2 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to spice preference)

Salt and pepper to taste

1 cup buttermilk

1/2 cup buffalo sauce

1 tablespoon olive oil

1 head of iceberg lettuce, leaves separated and rinsed

1/2 cup carrot, julienned

1/4 cup celery, finely chopped

1/2 cup blue cheese dressing (optional)

Chopped fresh parsley for garnish

Instructions

Prepare the Shrimp: In a large bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

Batter the Shrimp: Dip each shrimp into the buttermilk, allowing any excess to drip off, then dredge in the flour mixture to coat completely. Set on a plate while you prepare the others.

Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Once hot, add the battered shrimp in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to absorb excess oil.

Coat with Buffalo Sauce: In a bowl, toss the cooked shrimp with buffalo sauce until evenly coated.

Assemble the Wraps: Take a lettuce leaf and place a few buffalo shrimp in the center. Top with julienned carrots, chopped celery, and a drizzle of blue cheese dressing if desired.

Serve: Sprinkle with fresh chopped parsley for garnish and serve immediately while the shrimp are still warm.
