2 lobster tails

1 cup unsalted butter

2 cloves garlic, minced

1 lemon, zested and juiced

1 sprig fresh rosemary

1 tablespoon fresh parsley, finely chopped

Salt and pepper, to taste

Fresh chives, for garnish

Begin by preparing the lobster tails. Using kitchen shears, cut the top shell of each lobster tail down the center, stopping just before the tail fin. Gently pull the shell apart slightly and lift the lobster meat, keeping it attached at the base. This method is known as deveining.

    In a saucepan over low heat, add the unsalted butter and allow it to melt gently without boiling.

      Once the butter is melted, add in the minced garlic, lemon zest, and the sprig of rosemary. Stir gently to combine. Allow the mixture to infuse for about 5 minutes.

        Carefully place the lobster tails into the butter mixture. Poach the lobster tails in the melted butter for about 6-8 minutes or until the meat is opaque and cooked through. The internal temperature should reach 140°F (60°C). Rotate them halfway through cooking for even results.

          When done, remove the lobster tails from the butter and place them on a serving platter.

            Drizzle the lobster tails with the infused butter, squeezing fresh lemon juice on top for added brightness. Season with salt and pepper to taste.

              Garnish the dish with finely chopped parsley and fresh chives for a pop of color and flavor.
