Ingredients

2 large lobster tails

4 tablespoons unsalted butter, melted

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon lemon juice

1 teaspoon fresh parsley, chopped

Salt and pepper to taste

Lemon wedges for serving

Instructions

Prepare the Lobster Tails: Start by placing the lobster tails on a cutting board, shell side down. Using kitchen shears, carefully cut down the middle of the shell, stopping just before the tail end to avoid cutting through. Gently pull apart the shell to reveal the meat and slightly lift the meat out to rest on top of the shell.

Make the Garlic Butter: In a small bowl, combine the melted butter, minced garlic, paprika, lemon juice, parsley, salt, and pepper. Mix well to ensure the garlic is evenly distributed.

Preheat the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C).

Marinate the Lobster: Brush the lobster meat with the prepared garlic butter, ensuring it is generously coated. Reserve some butter for basting while grilling.

Grilling: Place the butterflied lobster tails shell side down on the grill. Cook for about 6-8 minutes, basting with garlic butter occasionally, until the meat is opaque and cooked through.

Finishing Touches: Once cooked, carefully remove the lobster tails from the grill. Drizzle any remaining garlic butter over the top.

Serve: Serve with lemon wedges on the side for an extra burst of flavor.
