2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, cold

1 tablespoon honey (optional, for a hint of sweetness)

Extra flour for dusting

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.

        Make a well in the center of the flour mixture and pour in the cold buttermilk and honey (if using). Gently mix using a fork until just combined; avoid overmixing.

          Lightly flour a clean surface and turn the dough onto it. Pat the dough into a rectangle about 1-inch thick. Fold it over onto itself three times, gently pressing down each time to layer the dough.

            Roll out again to about 1-inch thickness. Using a round biscuit cutter, cut out biscuits and place them on the prepared baking sheet, crowding them slightly for a soft side.

              Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

                Remove from the oven and let cool slightly before serving.
