2 large chicken breasts, boneless and skinless

1 cup buttermilk

1 tablespoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

Vegetable oil, for frying

4 soft brioche buns

Leafy lettuce (e.g., iceberg or romaine)

Tomato slices

Dill pickle slices

Your favorite mayonnaise or aioli

Marinate the Chicken: In a large bowl, combine the buttermilk and hot sauce (if using). Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

    Prepare the Flour Mixture: In another bowl, mix the all-purpose flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Whisk together until well combined.

      Heat the Oil: In a large frying pan or skillet, pour enough vegetable oil to cover the bottom with about 1 inch of oil, and heat it over medium-high heat until hot (around 350°F or 175°C).

        Coat the Chicken: Remove the marinated chicken from the refrigerator. Let excess buttermilk drip off, then dredge each breast in the seasoned flour mixture, pressing gently to adhere the flour to the chicken.

          Fry the Chicken: Carefully place the coated chicken breasts into the hot oil. Fry for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should read 165°F or 74°C). You may need to do this in batches to avoid overcrowding the pan.

            Drain and Rest: Once cooked, transfer the fried chicken to a paper towel-lined plate to drain excess oil. Let them rest for a few minutes.
