1 medium butternut squash, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, diced

1 apple (such as Granny Smith), peeled and chopped

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon ground ginger

½ teaspoon cinnamon

½ cup coconut milk

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and diced carrots to the pot, and continue cooking for an additional 3 minutes until fragrant.

      Stir in the cumin, ginger, and cinnamon, letting the spices bloom for 1 minute.

        Add the diced butternut squash and apple to the pot, stirring to combine. Cook for 5 more minutes until the squash starts to soften.

          Pour in the vegetable broth, ensuring that all the ingredients are submerged. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the squash is tender.

            Remove the pot from heat and use an immersion blender to puree the soup until smooth. (Alternatively, you can carefully transfer the soup in batches to a standard blender.)

              After blending, return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste. Reheat gently if necessary.

                Serve hot, garnished with fresh cilantro or parsley for a burst of color and flavor.
