2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

3/4 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup brown sugar, packed

1 tablespoon ground cinnamon (for filling)

For the glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Preheat your oven to 375°F (190°C) and grease a doughnut pan with cooking spray.

    In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1/2 teaspoon of ground cinnamon.

      In another bowl, combine the melted butter, milk, egg, and vanilla extract. Mix well until combined.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.

          In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon to create the filling.

            Fill each doughnut cavity about halfway with the dough, then sprinkle about a teaspoon of the cinnamon-sugar filling in each cavity, before topping with more dough until the mold is full.

              Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

                Once baked, allow the doughnuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  For the glaze, mix powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency with more milk for thinner glaze or more sugar for thicker glaze.

                    Once the doughnuts are cool, dip the tops into the glaze, allowing the excess to drip off.
