1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

½ cup baking soda

1 teaspoon salt

½ cup unsalted butter, melted

Coarse sea salt, for sprinkling

1 egg, beaten (for egg wash)

Instructions
 

Activate the Yeast: In a large mixing bowl, combine warm water, active dry yeast, and granulated sugar. Let it sit for about 5–10 minutes until it becomes frothy.

    Mix the Dough: Gradually add the all-purpose flour and salt to the yeast mixture. Stir until a dough begins to form.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 5–7 minutes until it's smooth and elastic.

        First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

          Prepare the Baking Soda Bath: In a large pot, bring 10 cups of water and the baking soda to a boil.

            Shape the Pretzel Bites: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a long log (about ½ inch thick) and cut it into 1-inch pieces.

              Boil the Dough: Drop the pieces into the boiling baking soda water, boiling them for about 30 seconds. Remove them with a slotted spoon and place them on a parchment-lined baking sheet.

                Make the Egg Wash: Brush each pretzel bite with the beaten egg and sprinkle with coarse sea salt.

                  Bake: Preheat your oven to 425°F (220°C). Bake the pretzel bites for 12–15 minutes or until they are golden brown.

                    Coat in Butter: Once baked, remove them from the oven and immediately toss them in melted butter for that extra richness.
