400g spaghetti or tonnarelli

100g Pecorino Romano cheese, finely grated

50g Parmigiano-Reggiano cheese, finely grated

Freshly cracked black pepper, to taste

2 tablespoons unsalted butter

Salt, for pasta water

Optional: 1 clove garlic, peeled and lightly crushed

Instructions
 

Bring a large pot of salted water to a boil, then add the spaghetti or tonnarelli. Cook according to package instructions until al dente, usually about 8-10 minutes.

    While the pasta is cooking, in a large bowl, combine the finely grated Pecorino Romano and Parmigiano-Reggiano cheeses. Set aside.

      In a separate large skillet, melt the butter over medium-low heat. If using, add the crushed garlic and sauté until fragrant, about 1-2 minutes, then remove the garlic clove and discard.

        Once the pasta is cooked, reserve about 1 cup of the pasta cooking water, then drain the pasta.

          Add the hot pasta to the skillet with the melted butter and garlic. Toss well to coat the pasta in the butter.

            Slowly add the reserved pasta water (start with 1/2 cup), tossing constantly to create a creamy emulsion.

              Take the cheese mixture and slowly sprinkle it over the pasta, continuously tossing to combine. If the sauce is too thick, add more reserved pasta water until you achieve a creamy consistency.

                Season generously with freshly cracked black pepper and toss again until well mixed.

                  Taste and adjust the seasoning if necessary.
