1.5 lbs pork tenderloin

3 tablespoons Cajun seasoning

2 tablespoons olive oil

3 tablespoons honey

2 tablespoons soy sauce

2 tablespoons apple cider vinegar

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork: In a small bowl, mix together the Cajun seasoning, olive oil, honey, soy sauce, apple cider vinegar, garlic, smoked paprika, black pepper, and salt. Rub this marinade all over the pork tenderloin, making sure it's well coated. Place the tenderloin in a resealable plastic bag or a covered dish, and refrigerate for at least 2 hours (or overnight for maximum flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Add a splash of olive oil and let it heat. Once hot, carefully add the marinated pork tenderloin. Sear the pork for about 3-4 minutes on each side, or until it develops a nice golden brown crust.

        Bake the Pork: Once the pork is seared, transfer the skillet to the preheated oven. Roast the pork for 20-25 minutes or until a meat thermometer reads 145°F (63°C) in the center.

          Rest the Meat: Remove the skillet from the oven and cover the pork tenderloin with aluminum foil. Let it rest for about 5-10 minutes to allow the juices to redistribute.

            Slice and Serve: After resting, slice the pork tenderloin into medallions. Drizzle any remaining pan juices over the top and garnish with chopped fresh parsley. Serve alongside your favorite sides such as roasted vegetables or rice.
