2 tablespoons unsalted butter

1 tablespoon olive oil

¼ cup diced yellow onion

¼ cup diced bell pepper (any color)

2 cloves garlic, minced

1 teaspoon Cajun seasoning (adjust to taste)

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for extra heat)

2 cups sharp cheddar cheese, shredded

1 cup creamy Monterey Jack cheese, shredded

2 cups whole milk

1 tablespoon all-purpose flour

Salt and pepper to taste

½ cup panko breadcrumbs

2 tablespoons chopped fresh parsley (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the butter and olive oil over medium heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until they begin to soften. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Make the Cheese Sauce: In the same skillet, stir in the Cajun seasoning, smoked paprika, and cayenne pepper. Sprinkle the flour over the sautéed vegetables and cook for 1-2 minutes, stirring constantly. Gradually pour in the milk while whisking to combine, ensuring there are no lumps. Continue to cook, whisking frequently, until the mixture thickens (about 5-7 minutes).
