4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 green bell pepper, diced

1 stalk celery, diced

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

1/2 cup cooked and crumbled bacon (optional for topping)

Instructions
 

Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, green bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables have softened and the onion is translucent.

    Add Potatoes and Spices: Stir in the diced potatoes, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Mix well to coat the potatoes and spices evenly.

      Pour in the Broth: Add the chicken or vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.

        Blend for Creaminess: Once the potatoes are cooked, use an immersion blender to blend the soup to your desired consistency (smooth or chunky). If you don’t have an immersion blender, carefully transfer batches to a countertop blender.

          Add Cream and Final Seasoning: Stir in the heavy cream and adjust seasoning with more Cajun seasoning, salt, and pepper if needed. Allow the soup to heat through for another 5 minutes.
