4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 carrots, diced

3 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons Cajun seasoning

2 tablespoons olive oil

Salt and pepper to taste

1 cup green onions, chopped (for garnish)

1/2 cup shredded cheese (optional, for topping)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions, and sauté until they become translucent (about 5 minutes).

    Stir in the minced garlic, diced bell pepper, and carrots. Cook for an additional 3-4 minutes until softened.

      Add the diced potatoes to the pot and stir well to combine all the vegetables.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook uncovered for about 15-20 minutes or until the potatoes are fork-tender.

          Using a potato masher, gently mash some of the potatoes in the pot to create a creamy texture while leaving some intact for heartiness.

            Stir in the heavy cream and the Cajun seasoning. Mix well and allow it to simmer for another 5-10 minutes to thicken slightly.

              Taste the soup and season with salt and pepper according to your preference.

                Serve hot, garnished with chopped green onions and shredded cheese if desired.
