4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 tablespoon olive oil

Salt and pepper to taste

Green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper, sautéing until soft, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the diced potatoes to the pot, followed by the vegetable broth. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, about 15-20 minutes.

        Once the potatoes are cooked, use a potato masher or immersion blender to blend the soup until smooth, leaving some chunks for texture if desired.

          Stir in the heavy cream, Cajun seasoning, smoked paprika, and corn kernels. Season with salt and pepper to taste. Let the soup simmer for another 5-10 minutes for the flavors to meld.

            Taste and adjust the seasoning as necessary. If you want more heat, sprinkle in some additional Cajun seasoning.

              Serve hot, garnished with sliced green onions and fresh parsley.
