1 pound sea scallops, cleaned and patted dry

2 tablespoons Cajun seasoning

2 tablespoons olive oil

Salt and pepper to taste

1 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

1 teaspoon lemon juice

2 teaspoons chopped fresh chives (for garnish)

Start by seasoning the scallops. Sprinkle the Cajun seasoning evenly on all sides of the scallops, then add a pinch of salt and pepper to taste.

    Heat the olive oil in a large skillet over medium-high heat until it shimmers but is not smoking.

      Carefully place the scallops in the skillet, making sure they are not crowded. Sear the scallops for about 2-3 minutes on one side, until they develop a golden-brown crust.

        Flip the scallops gently and cook for another 2-3 minutes on the other side. The scallops should be opaque and slightly firm to the touch. Remove them from the skillet and set aside.

          In the same skillet, lower the heat to medium and add the heavy cream. Allow it to simmer gently for 1-2 minutes, stirring frequently.

            Stir in the Dijon mustard, whole grain mustard, and lemon juice. Mix well until the sauce is smooth and heated through. Adjust seasoning if necessary.

              To serve, place the seared scallops on a plate and drizzle the spicy mustard cream sauce over them.

                Garnish with chopped chives for a fresh touch.
