1 lb (450g) large shrimp, peeled and deveined

1 cup long-grain rice

2 cups chicken broth

1 medium onion, diced

1 bell pepper (any color), diced

2 stalks celery, diced

3 cloves garlic, minced

1 tablespoon Cajun seasoning (store-bought or homemade)

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

1 green onion, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by rinsing the rice under cold water until the water runs clear. This helps remove excess starch and avoids stickiness.

    In a large skillet or sauté pan, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

      Add minced garlic to the skillet and sauté for an additional minute, stirring frequently to prevent the garlic from burning.

        Sprinkle in the Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 1 minute, allowing the spices to bloom.

          Add the rinsed rice to the skillet, stirring to coat the rice with the vegetable and spice mixture. Toast the rice for about 2 minutes, stirring continuously.

            Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the rice simmer for about 15 minutes, or until the rice is tender and the liquid has absorbed.

              While the rice is cooking, prepare the shrimp. In a separate bowl, toss the shrimp with a pinch of salt and a sprinkle of Cajun seasoning.

                Once the rice is nearly done, push the rice to one side of the skillet and add the seasoned shrimp to the empty side. Cook for 3-4 minutes until the shrimp turn pink and opaque. Stir everything together once the shrimp are cooked.

                  Taste and adjust seasoning if necessary, then remove from heat.

                    Serve hot, garnished with sliced green onions and fresh parsley for a colorful finish.
