Cajun Shrimp Deviled Eggs

6 large eggs

1 cup cooked shrimp, peeled and chopped

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon Cajun seasoning

1 tablespoon fresh lemon juice

1 small celery stalk, finely diced

1 tablespoon green onion, finely chopped

Salt and pepper to taste

Paprika for garnish

Instructions
 

Place the eggs in a saucepan, cover with cold water, and bring to a boil over medium heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes.

    After 12 minutes, transfer the eggs to an ice bath for about 5 minutes to cool and stop the cooking process.

      Once cooled, peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.

        To the yolks, add the mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, and diced celery. Mix until smooth and creamy.

          Fold in the chopped shrimp and green onion. Season with salt and pepper to taste.

            Using a piping bag or a spoon, fill the egg white halves with the shrimp mixture.

              Sprinkle paprika over the filled deviled eggs for garnish.
